Ingredients :

  • 2 organic, free range pasture Eggs
  • 1 tbsp organic Raw Butter or Coconut Oil
  • Homemade or unpasteurized Sauerkraut
  • Makes 1 Serving

Directions :

  1. Stick your bread in the toaster, well done so it stays firm after topped with the eggs.
  2. In a hot skillet add your butter or coconut oil (or both), and gentle add in the eggs to prevent the yolks from breaking.
  3. Top the eggs with the Tex-Mex Blend seasoning, and once the edges are crisp flip the eggs and turn off the heat.
  4. Butter your toast and then top with the eggs and your homemade sauerkraut. Store bought sauerkraut is nearly always inferior (not fermented long enough and pasteurized), but use if that's all you have available.
