Ingredients :

  • 1/2 pound Whole Grain Elbow Macaroni
  • 3 tbsp organic Raw Butter
  • 3 tbsp Sprouted Wheat Flour
  • 1 tbsp Ground Mustard
  • 3 cups organic Milk
  • 1/2 cup Yellow Onion, finely diced
  • 1 Bay Leaf
  • 1 large Egg

Directions :

Makes enough for 2 people

  1. Preheat oven to 350 degrees.
  2. In a large pot of boiling, salted water cook the pasta to al dente.
  3. While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and whisk until there are no lumps. Stir in the milk or kefir, onion, bay leaf, and Northern European Blend.
  4. Simmer for ten minutes and remove the bay leaf.
  5. Temper in the egg. Stir in 3/4 of the cheese. Season with Northern European Blend. Fold the macaroni into the mix and pour into a 2-quart casserole dish.
  6. Top with remaining cheese.
  7. Melt the butter in a saute pan and toss the bread crumbs with a pinch of Northern European Blend, saute for 2 minutes. Top the macaroni with the bread crumbs.
  8. Bake for 30 minutes. Remove from oven and rest for five minutes before serving with lightly sauteed or steamed broccoli.
