Mid-Eastern Blend - Chicken & Coconut Curry

Ingredients :

  • 1 pack frozen Stir Fry Veggie Mix
  • 2 Chicken Breasts
  • 1 16 oz can of Coconut Milk
  • 2 tsp Coconut Oil

Directions :

  1. In a frying pan add 1 tsp of coconut oil and heat on medium heat. 
  2. Chop up the chicken into small pieces and toss them into the frying pan. 
  3. Add the Mid-Eastern Blend spice and cook until finished on medium. (about 15 minutes)
  4. In a separate pot, add 1 tsp of oil, and heat on medium. 
  5. Add the frozen vegetable blend and saute for about 5-7 minutes, and then add one 16 oz can of coconut milk.
  6. Allow the coconut milk to heat up and then add the chicken to the pot. Mix well. Add one or two pinches of Mid-Eastern Blend spice for more flavor if needed.  
  7. Pair with brown rice, quinoa, cous cous, or wild rice.
