Ingredients :

  • 4 tbsp Olive Oil
  • 1 pound Shiitake Mushrooms, stems removed, cut into thin slices
  • 2 cloves Garlic, minced
  • 1 1/2 cups Chicken Broth or Homemade Stock
  • 3/4 pound Pasta
  • 1/2 cup grated Parmesan Cheese, plus more for serving
  • 1.5 tbsp AcroAma Mediterranean Blend

Directions :

Makes enough for 4 people

  1. In a large frying pan, heat 2 tablespoons of the oil over moderate heat. Add the mushrooms and 1 tbsp Mediterranean blend and cook, stirring occasionally, until the mushrooms are browned, 5 to 10 minutes.
  2. In a separate hot skillet add some oil the garlic and cook, stirring for 30 seconds. Add the chicken slices and ½ tbsp of Mediterranean Blend, saute for about 5 minutes. Add the broth and bring to a simmer. Cook until reduced to about 1 cup.
  3. Meanwhile, in a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain. Toss the spaghetti with the mushroom sauce and chicken, the remaining 2 tablespoons oil, and the Parmesan. Serve with minced tomato and olive oil with a pinch of Mediterranean Blend, and more cheese if desired.
