Ingredients :

 
  • Onion, small dice
  • Garlic Cloves, half or quarter the larger ones
  • Olive Oil
  • Organic Sugar
  • White Vinegar
  • Eggplant, peeled medium dice
  • Zucchini, medium dice
  • Diced Tomato, skin & seeds removed
  • Tomato Juice
  • AcroAma Mediterranean Blend

Directions :

  1. Heat the oil in a large pan, fry the onion & garlic to a light golden color.
  2. Add a little sugar & some vinegar, caramelize to a light golden color.
  3. Add all the ingredients to the pot and simmer for 20 minutes, correct the consistency with juice if needed. (Boil again if you add juice.)
  4. Taste and add AcroAma Mediterranean Blend to your preference.
  5. I serve in a ovenproof dish glazed with white bread crumbs & grated Asiago.
