Ingredients :

  • 2 Cups Elbow Macoroni
  • 1/2 Cup Fennel Bulb, Sliced
  • 1/2 Cup Orange and Yellow Peppers, Sliced
  • 2 tablespoons minced fresh basil

Directions :

Makes enough for 2 people (2 servings)

  1. Prepare elbow macoroni to Al Dente.
  2. Heat a little oil in your pan, then add the garlic, sautee for abbout 30 seconds before your fennel, peppers, and basil. Stir & season.
  3. In a separate pan, heat some olive oil then season and sautee your pasta for a minute or two before adding in your vegetables.
  4. Mix well, folding in a little of your favorite shredded cheese (if desired).
  5. Served in a wide bowl topped with more shredded cheese and basil sprigs.
