Ingredients :

   
  • 1 cup Quinoa Spiral Pasta
  • 2 tsp Sunflower Oil
  • 1 Tomato
  • 2 Cloves Garlic, chopped
  • 1/2 cup chopped Onions
  • 1/2 cup chopped Broccoli (optional)

Directions :

Makes enough for 2 people (2 servings)

  1. Bring approximately 2 cups of water to boiling, use a pinch or two of salt and add the pasta to the boiling water.  Let the pasta cook until is is soft (about 10 minutes).
  2. In a frying pan, add the sunflower oil and let it heat up for 2 minutes while the stove is on medium heat.
  3. Add the onions to the pan and mix until they are all coated with the oil, then half of the chopped garlic and the Mediterranean Blend and let those simmer for about 5 minutes.
  4. Then toss in the chopped tomato and broccoli and let the vegetables simmer until the broccoli is soft and the onions are a nice caramel brown. Then add the marinara sauce and mix well. Add the rest of the garlic and half of the artichoke hearts with the oil.
  5. Let the mix simmer for about 10 minutes on medium to low heat. Combine the pasta with the sauce and mix well.  Add the rest of the artichoke hearts and enjoy.

* you can use any type of pasta and high heat oil (grapeseed, sunflower, coconut)
