Northern European Blend - Mint Potatoes Sauteed In Butter

Mint Potatoes With Northern European Blend

Ingredients :

  • 2-4 Red Skinned Potatoes, quartered
  • Butter or Olive Oil

Makes 1-2 servings

Directions :

  1. Wash and clean your potatoes, then cut them into quarters.
    Select your cleaned mint leaves and dice them--remember that it's easiest to roll them up before you cut them.
  2. Boil the potatoes and half of the mint for about 15-20 minutes, then drain off the water.
  3. In a hot skillet add some butter or olive oil, 1/2 tsp Northern European Blend, the rest of the mint leaves, and then the potatoes. Toss and sautee for 2-3 mintues onto a plate.
  4. Add some fresh mint, toss once more, and then serve. Garnish with the top of the mint sprig.
